Simon says: “Join us on an exclusive ‘Histillery Tour’, where Israel’s rich historical legacy intersects with the entrepreneurial spirit of the present – and always with a deep connection to The Land - & a winery or distillery visit"
Our day commenced at Elul Vineyard - 30km from Jerusalem - the first kosher organic winery in Israel, founded by Moshe Elul in 2014.
Renowned for its distinctive approach, Elul crafts wine from 13 varieties of organic grapes, without the use of bisulphites, relying on wild yeasts for the fermentation process. The vineyard embraces traditional agricultural methods, steering clear of pesticides, chemical fertilizers, or mechanical harvesters.
Our visit included a tour of the vineyard and a luxurious wine tasting paired with cheeses & more.
Our next stop was Tel Gezer, an archaeological site which has revealed important finds including the "Gezer calendar".
Discovered in 1908, this small 3,000-year-old limestone tablet from the time of King Solomon, features an inscription, describing monthly or bi-monthly periods attributing to each a task such as harvest, planting, or tending specific crops. An image of the tablet can be found on each bottle of Elul wine.
Tel Gezer's historic vineyards, celebrated for centuries, were crucial during Solomon's era as a vital stop on the pilgrimage route from the port of Jaffa to the Temple in Jerusalem. Moshe has achieved his goal of replicating a wine fit to be taken to the Beit Hamikdash - The Temple in Jerusalem.
In the afternoon, our journey led us to Nahal Sorek, which is believed to be where Delilah enticed Samson to reveal the secret of his strength, leading to his capture by the Philistines.
A short drive away, to Tel Azeka, the backdrop for another biblical tale, provided a panoramic view of the Valley of Elah. It was here that David, armed with a slingshot and stones, fought Goliath during the battle of the Philistines against the Israelites.
As the day concluded, a breathtaking sunset added the perfect finale to our exploration.
Bringing these captivating stories to life for tour groups is such a pleasure for me, and I look forward to continuing the journey with more unique experiences on future Histillery Tours!
